vegetables have been on my brain lately. maybe its because one night a week i am up to my ears in steamed, pureed, and ice cube trayed vegetables for river. or because we joined a neighborhood produce co-op and i am having to learn what bok choy is and what to do with it. or maybe just cause i was a nutrition teacher in my previous life and i like greens.
either way, i came across this DELICIOUS looking recipe for fried zucchini strings. oh they look so good. and now i have the answer for what to do with the zucchini in my fridge.
